Menu Plan Monday: The "Un-Menu Plan" Edition

I’m going to be completely honest here. I’m drawing a blank for this week’s menu plan. We’ve had so much craziness around here that my mind is just in overdrive. Between my husbands recent leg injury, our “visitor” in the basement, the burst water pipe, my 1 year old getting chicken pox after the chicken pox vaccination…..and need I go on? I’ve been sitting here trying to figure out what’s for dinner this week? And you know what I’ve come up with? This:

Lasagna Rolls, salad, garlic bread

Yep, one day of menu planning…..This has never happened to me before. I normally can come up with a week of ideas very easily but not this week! So, feel free to help me out and leave me an easy and quick recipe idea! And just so you know, I really don’t recommend not having a menu plan but we all have our moments right?!

Here's an easy one. If you like chili. 1 can kidney beans (or beans of your choice), 1 can white corn, 1 pound cooked ground beef or ground turkey or sausage, 1 can diced tomatoes with italian seasoning or add your own, 1 jar of sams choice black bean and corn salsa (or another favorite- this is good though) – throw it in the crock pot and let it do the work for you. Double it up if you want leftovers for awhile. Hope you have a better week. By the by the doc told me after my son got the chicken pox from his cousins that had the vaccination that it only guarantees a lesser case of the pox…. what they don't tell you ahead of time.

Take frozen chicken patties and either: bake them and top them with marinara and mozzarella (both things leftover from your lasagna rolls probably), then serve on hamburger buns for a quick Chicken Parm sandwich. OR bake the chicken then slice it in strips, serve it in flour tortillas, top with leftover salad and dressing for a quick chicken wrap! :) You can also substitute grilled chicken for frozen if desired. :)

An easy meal we like is soup and grilled cheese sandwiches. You could make the soup yourself or grab a can or 2 from the pantry.

Breakfast for dinner is also a nice treat and usually pretty easy. You could do bacon & eggs, biscuits & gravy, pancakes & sausage, omelets with chopped leftover veggies, etc. Lots of possibilities.

Here's a frugal and easy one: Vegetable Soup Recipe
Ingredients:
Large can (32 oz) tomato juice
2 large potatoes, peeled and diced
2 carrots diced
1 can green beans
1 can corn
1 cup uncooked pasta noodles (I like to use penne or ziti)
Salt & pepper to taste

Note: A package of frozen mixed vegetables or canned mixed vegetables could be substituted, instead of fresh ingredients. I’ve also added ground beef to this recipe before to make vegetable beef soup.

Serves: 4 Servings

Directions:

In a large pot over medium heat, mix all vegetables with tomato juice, cover and allow to simmer for 30 minutes or until vegetables are softened. Add pasta to mixture and simmer for another 5 to 10 minutes, until pasta is cooked. Add salt and pepper to taste. Allow to cool for a few minutes.

My family loves breakfast burritos, so we're having them tonight: Brown a pound of sausage, then scramble some eggs in with the browned sausage. Add a can of drained rotel tomatoes and some shredded cheese. Put the mixture in flour tortillas, add some more cheese or sour cream, etc. Makes for a very filling meal! Later this week we are going to have pork chops in the crock pot, covered with cream of mushroom soup…let it cook most of the day, and the work is done for you…they just fall apart they're so tender! Hope things get better for you!

Easy & diverse shredded beef
2 pounds london broil or similar cut
1 pack taco seasoning
1 Tbsp garlic salt
2 Tbsp white vinegar
1 small onion chopped
1 small can diced green chilies
Place all in crockpot with meat on bottom & cook on low for 4-6 hours.
Makes an awesome filling for tacos or burritos, also great on top of a big garden salad with a salsa ranch dressing & super yummy in a scramble to make breakfast burritos.

I double the recipe & it feeds us for several meals throughout the week. If we don't plan enough meals to use it all it freezes really well too. And the bonus is that it is a weight watchers recipe!

Wow, some great ideas have already been shared!! Here is another easy crock-pot meal:

frozen chicken breasts go into the bottom of the crock, cover with cream of chicken soup (2 cans usually), cook on low for about 8 hours (or high for 4). Serve the chicken on the bed of rice with the sauce over all of it.

I would say make some breakfast for dinner one night. Cheap and easy!

I realize I'm a week late, but had to commend you for even posting this. Yes, I think "craziness" is a most appropriate word. :-D
I came across this recipe for Pierogi Skillet Dinner (http://fromtheheartofmykitchen.blogspot.com/2008/09/pierogi-skillet-dinner.html) from one of the other bloggers and had to share it with you because it's SO EASY!
Hope you've had time to rest and take care of your family (and yourself) this week. :-)
