I hope everyone has a great week.  My oldest has her very first ballet lesson today and we are so excited! (yes, I said “We”!) I guess just about everyone is back in school now? I hope y’all have a great school year.

Well, here is the plan for the week. Happy Monday!

  • Beef Stew with carrots and potatoes in the crock pot
  • Chef Salad (romaine, garden veggies and turkey and Swiss cheese)
  • Enchilada Casserole, Rice (anyone have a good easy recipe for Spanish or Mexican rice as an easy side?)
  • Buttermilk Baked Chicken, mashed potatoes, green beans
  • Movie Night: Buffalo Chicken Dip, mini make your own pizzas, veggies and dip
  • Hamburgers on the grill, potato salad, baked beans
  • Baked Cheese Ravioli, Salad

Easy Spanish Rice:

Gently boil 2 roma tomatoes with the peel on, for about 5 minutes. Once they are tender, remove them from the boiling water and remove the skin. Puree the tomato flesh until liquid and add it to your regular rice ingredients in a rice cooker or pot. I always make my rice with salt, onion powder or dried minced onion, and garlic powder, plus olive oil. Once the rice is cooked, you can chop up some cilantro and sprinkle it in, at the end, stir well, and serve.

The tomato gives it a nice reddish color like Spanish rice, and adds a touch of tang. The spices just make the rice yummy. My husband loves it when I make my rice, Spanish or not.
